Ingredients
- 1 cup (2 sticks / 227 g) unsalted butter, melted
- 1 ½ cups (300 g) light brown sugar, packed
- 2 large eggs, room temperature
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 2 ½ cups (312.5 g) all-purpose flour
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- Confectioners’ sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease.
- In a large bowl, whisk melted butter and brown sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in molasses and vanilla.
- In a separate bowl, whisk flour, ginger, cinnamon, baking powder, and salt.
- Gradually fold dry ingredients into wet ingredients until just combined.
- Spread batter evenly into prepared pan.
- Bake for 25–30 minutes, until a toothpick inserted in the center comes out with moist crumbs.
- Cool completely before slicing. Dust with confectioners’ sugar if desired.
