Description

Ingredients

  • 1 cup (2 sticks / 227 g) unsalted butter, melted
  • 1 ½ cups (300 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312.5 g) all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • Confectioners’ sugar, for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease.
  2. In a large bowl, whisk melted butter and brown sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition. Stir in molasses and vanilla.
  4. In a separate bowl, whisk flour, ginger, cinnamon, baking powder, and salt.
  5. Gradually fold dry ingredients into wet ingredients until just combined.
  6. Spread batter evenly into prepared pan.
  7. Bake for 25–30 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  8. Cool completely before slicing. Dust with confectioners’ sugar if desired.
