Description

Crispy fried pies filled with sweet peach slices, finished with a vanilla glaze for a classic, summery dessert.


Ingredients

Pie Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup cold unsalted butter
  • ¼ cup butter-flavored shortening
  • ½ cup cold water

Peach Filling:

  • 16 oz frozen sliced peaches
  • ½ cup granulated sugar
  • 1 tablespoon light brown sugar
  • 1 tablespoon unsalted butter
  • 23 teaspoons fresh lemon juice
  • 12 teaspoons cornstarch (optional)

Vanilla Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Prepare dough by combining flour and salt. Cut in butter and shortening until coarse crumbs form, then add cold water until dough forms. Chill 30 minutes.
  2. For filling, melt butter in a saucepan and add peaches, granulated sugar, brown sugar, and lemon juice. Cook until softened. Add cornstarch if needed to thicken. Cool slightly.
  3. Roll out dough and cut into circles about 4–5 inches in diameter. Spoon peach filling onto the center of each circle, fold over, and seal edges with a fork.
  4. Heat oil to 350°F (175°C) and fry pies 2–3 minutes per side until golden. Drain on paper towels.
  5. Mix powdered sugar, milk, vanilla, and salt to make glaze. Drizzle over warm pies before serving.

Notes

  • Chill dough before rolling for a flakier crust.
