Description
Crispy fried pies filled with sweet peach slices, finished with a vanilla glaze for a classic, summery dessert.
Ingredients
Pie Crust:
- 2 cups all-purpose flour
- 1 teaspoon salt
- ¼ cup cold unsalted butter
- ¼ cup butter-flavored shortening
- ½ cup cold water
Peach Filling:
- 16 oz frozen sliced peaches
- ½ cup granulated sugar
- 1 tablespoon light brown sugar
- 1 tablespoon unsalted butter
- 2–3 teaspoons fresh lemon juice
- 1–2 teaspoons cornstarch (optional)
Vanilla Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare dough by combining flour and salt. Cut in butter and shortening until coarse crumbs form, then add cold water until dough forms. Chill 30 minutes.
- For filling, melt butter in a saucepan and add peaches, granulated sugar, brown sugar, and lemon juice. Cook until softened. Add cornstarch if needed to thicken. Cool slightly.
- Roll out dough and cut into circles about 4–5 inches in diameter. Spoon peach filling onto the center of each circle, fold over, and seal edges with a fork.
- Heat oil to 350°F (175°C) and fry pies 2–3 minutes per side until golden. Drain on paper towels.
- Mix powdered sugar, milk, vanilla, and salt to make glaze. Drizzle over warm pies before serving.
Notes
- Chill dough before rolling for a flakier crust.
- Avoid overfilling pies to prevent leaks.
- Glaze can be applied just before serving for the best texture.
