Ingredients
- 2 live lobsters (1.5 lbs each)
- 4 tbsp unsalted butter
- 2 shallots, finely chopped
- 1 cup cremini mushrooms, sliced
- ½ cup dry white wine
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated
- 1 tsp paprika
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook lobsters in boiling salted water for 8–10 min; remove meat and chop.
- Sauté butter and shallots 2 minutes; add mushrooms and cook until tender.
- Add wine; reduce 3–4 min. Stir in cream and simmer 3 min.
- Stir in lobster, paprika, parsley, and half the Parmesan.
- Fill shells; top with remaining cheese.
- Broil 3–5 min until golden.
Notes
- Use freshly grated cheese for best melt and flavor.
- Add Dijon mustard for a more traditional French taste.
- Don’t over-boil the lobster; it becomes tough quickly.
