Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- ½ red onion, sliced
- 1 cup BBQ sauce (your favorite brand or homemade)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
- Optional garnish: fresh cilantro or green onions
Instructions
- Preheat your oven to 400°F (200°C) or heat your grill to medium-high.
- Prep the ingredients – Chop pineapple, peppers, and onion into bite-sized pieces. Season chicken with salt, pepper, garlic powder, and paprika.
- Assemble foil packets – Tear four large sheets of aluminum foil (about 12×12 inches each). Brush lightly with olive oil. Place one chicken breast in the center of each sheet.
- Add toppings – Top each chicken breast with pineapple, bell peppers, and onion. Pour BBQ sauce evenly over each portion.
- Seal packets – Fold the foil over the chicken and crimp edges tightly to seal.
- Cook –

- Grill: Cook for 20–25 minutes, flipping halfway through.
