Description

Enjoy a tropical twist with this easy Foil Packet Hawaiian BBQ Chicken recipe! Juicy chicken, sweet pineapple, and tangy BBQ sauce make the perfect quick and mess-free dinner for any night.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • ½ red onion, sliced
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Optional garnish: fresh cilantro or green onions

Instructions

  1. Preheat your oven to 400°F (200°C) or heat your grill to medium-high.
  2. Prep the ingredients – Chop pineapple, peppers, and onion into bite-sized pieces. Season chicken with salt, pepper, garlic powder, and paprika.
  3. Assemble foil packets – Tear four large sheets of aluminum foil (about 12×12 inches each). Brush lightly with olive oil. Place one chicken breast in the center of each sheet.
  4. Add toppings – Top each chicken breast with pineapple, bell peppers, and onion. Pour BBQ sauce evenly over each portion.
  5. Seal packets – Fold the foil over the chicken and crimp edges tightly to seal.
  6. Cook
  7. Oven: Bake for 25–30 minutes, until chicken reaches 165°F internal temperature.
  8. Grill: Cook for 20–25 minutes, flipping halfway through.
  9. Serve – Carefully open packets (watch for steam!) and garnish with cilantro or green onions before serving.

Notes

  • Use heavy-duty foil to prevent tearing and leakage.
  • For extra flavor, marinate the chicken in BBQ sauce and pineapple juice for 1–2 hours before cooking.
  • Add jalapeños or chili flakes for a spicy version.
  • To make it a complete meal, add small potato cubes or serve over jasmine rice.
  • If baking multiple packets, place them on a large baking sheet for easier handling.
