Description

A rich and flavorful chicken curry made with aromatic spices, tomatoes, and creamy coconut milk. Perfect comfort food served with rice or naan. Easy, customizable, and absolutely delicious!


Ingredients

  • 1.5 lbs chicken (bone-in or boneless, cut into pieces)
  • 2 medium onions (finely chopped)
  • 2 tomatoes (chopped or 1 cup canned tomatoes)
  • 2 tbsp cooking oil or ghee
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp ground coriander
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp garam masala
  • 1 cup coconut milk (or plain yogurt)
  • 12 green chilies (optional, for heat)
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat oil or ghee in a large pan. Add cumin seeds and let them sizzle.
  2. Add onions and sauté until golden brown.
  3. Stir in garlic and ginger paste, cooking until fragrant.
  4. Add tomatoes and cook until soft and saucy. Mix in turmeric, coriander, chili powder, and salt.
  5. Add the chicken pieces, stirring to coat with the spice mixture. Cook until lightly browned.
  6. Pour in coconut milk (or yogurt) and mix well. Cover and simmer for 20–25 minutes until the chicken is tender.
  7. Finish with garam masala, stir, and garnish with fresh cilantro.
  8. Serve hot with rice, naan, or roti.

Notes

  • For extra flavor, marinate the chicken with yogurt, turmeric, and chili powder for 30 minutes before cooking.
  • Add a cinnamon stick or curry leaves while simmering for a richer taste.
  • To thicken the curry, let it simmer uncovered for a few minutes.
  • For a lighter version, use low-fat yogurt instead of coconut milk.
