Description
A rich and flavorful chicken curry made with aromatic spices, tomatoes, and creamy coconut milk. Perfect comfort food served with rice or naan. Easy, customizable, and absolutely delicious!
Ingredients
- 1.5 lbs chicken (bone-in or boneless, cut into pieces)
- 2 medium onions (finely chopped)
- 2 tomatoes (chopped or 1 cup canned tomatoes)
- 2 tbsp cooking oil or ghee
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 2 tsp ground coriander
- 1 tsp chili powder (adjust to taste)
- 1 tsp garam masala
- 1 cup coconut milk (or plain yogurt)
- 1–2 green chilies (optional, for heat)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil or ghee in a large pan. Add cumin seeds and let them sizzle.
- Add onions and sauté until golden brown.
- Stir in garlic and ginger paste, cooking until fragrant.
- Add tomatoes and cook until soft and saucy. Mix in turmeric, coriander, chili powder, and salt.
- Add the chicken pieces, stirring to coat with the spice mixture. Cook until lightly browned.
- Pour in coconut milk (or yogurt) and mix well. Cover and simmer for 20–25 minutes until the chicken is tender.
- Finish with garam masala, stir, and garnish with fresh cilantro.
- Serve hot with rice, naan, or roti.
Notes
- For extra flavor, marinate the chicken with yogurt, turmeric, and chili powder for 30 minutes before cooking.
- Add a cinnamon stick or curry leaves while simmering for a richer taste.
- To thicken the curry, let it simmer uncovered for a few minutes.
- For a lighter version, use low-fat yogurt instead of coconut milk.
