Description
Southwestern Frito Pie with ground beef, beans, corn, and cheddar cheese for a cozy, family-friendly meal.
Ingredients
- 1 pound Ground Beef
- 1 small Onion, finely chopped
- 1 packet Taco Seasoning
- 1 10-ounce can Diced Tomatoes with Green Chilies
- 1 15-ounce can Ranch Style Beans
- 1 cup Corn Kernels
- 1 10.25 oz bag Fritos
- 1 ½ cups Shredded Cheddar Cheese
- Optional toppings: sliced jalapeños, sour cream, fresh cilantro
Instructions
- Preheat oven to 350°F (175°C).
- Cook ground beef and chopped onion in a skillet over medium heat until beef is browned and onions are soft. Drain excess fat.
- Add taco seasoning and a splash of water; stir and simmer 2-3 minutes.
- Stir in diced tomatoes with green chilies, ranch style beans, and corn. Simmer 5 minutes.
- In a baking dish, layer half of Fritos, pour beef mixture over, top with remaining Fritos, and sprinkle cheese on top.
- Bake 15-20 minutes or until cheese is melted and bubbly.
- Serve warm, garnished with optional toppings.
Notes
- Store Fritos separately if serving leftovers to maintain crunch.
- Add jalapeños or hot sauce for extra spice.
- Vegetarian version: replace beef with black beans or lentils.
