Description

Southwestern Frito Pie with ground beef, beans, corn, and cheddar cheese for a cozy, family-friendly meal.


Ingredients

  • 1 pound Ground Beef
  • 1 small Onion, finely chopped
  • 1 packet Taco Seasoning
  • 1 10-ounce can Diced Tomatoes with Green Chilies
  • 1 15-ounce can Ranch Style Beans
  • 1 cup Corn Kernels
  • 1 10.25 oz bag Fritos
  • 1 ½ cups Shredded Cheddar Cheese
  • Optional toppings: sliced jalapeños, sour cream, fresh cilantro


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef and chopped onion in a skillet over medium heat until beef is browned and onions are soft. Drain excess fat.
  3. Add taco seasoning and a splash of water; stir and simmer 2-3 minutes.
  4. Stir in diced tomatoes with green chilies, ranch style beans, and corn. Simmer 5 minutes.
  5. In a baking dish, layer half of Fritos, pour beef mixture over, top with remaining Fritos, and sprinkle cheese on top.
  6. Bake 15-20 minutes or until cheese is melted and bubbly.
  7. Serve warm, garnished with optional toppings.

Notes

  • Store Fritos separately if serving leftovers to maintain crunch.
  • Add jalapeños or hot sauce for extra spice.
  • Vegetarian version: replace beef with black beans or lentils.
