Ingredients
- 2 lbs chicken breasts or beef chuck roast (or pork shoulder)
- 4 medium potatoes, peeled and cubed
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 cups chicken or beef broth
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 cup frozen peas or green beans (optional, added near the end)
Instructions
- Prep ingredients: Wash and chop vegetables. Trim excess fat from meat.
- Layer crockpot: Place protein at the bottom of the slow cooker, then add vegetables on top.
- Season: Sprinkle garlic, paprika, Italian seasoning, salt, and pepper over everything.
- Add broth: Pour chicken or beef broth over ingredients, covering halfway.
- Cook: Cover and cook on Low for 6–8 hours or High for 3–4 hours until meat is tender and vegetables are cooked.
- Finish: Stir in frozen peas or beans 20 minutes before serving. Taste and adjust seasoning as needed.
- Serve: Enjoy with bread, rice, or a fresh salad!
