Description

This Easy Crockpot Dinner is a hearty, family-friendly meal made with tender meat, vegetables, and simple seasonings. Perfect for busy weeknights, meal prep, or cozy dinners.


Ingredients

  • 2 lbs chicken breasts or beef chuck roast (or pork shoulder)
  • 4 medium potatoes, peeled and cubed
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups chicken or beef broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup frozen peas or green beans (optional, added near the end)


Instructions

  1. Prep ingredients: Wash and chop vegetables. Trim excess fat from meat.
  2. Layer crockpot: Place protein at the bottom of the slow cooker, then add vegetables on top.
  3. Season: Sprinkle garlic, paprika, Italian seasoning, salt, and pepper over everything.
  4. Add broth: Pour chicken or beef broth over ingredients, covering halfway.
  5. Cook: Cover and cook on Low for 6–8 hours or High for 3–4 hours until meat is tender and vegetables are cooked.
  6. Finish: Stir in frozen peas or beans 20 minutes before serving. Taste and adjust seasoning as needed.
  7. Serve: Enjoy with bread, rice, or a fresh salad!
