Description

Whip up this Easy Cheesy Hamburger Potato Casserole — a hearty, comforting dinner layered with tender potatoes, juicy ground beef, and creamy melted cheese. Perfect for busy weeknights or family gatherings!

Ingredients

  • 1 lb ground beef (lean preferred)
  • 5 medium potatoes (Russet or Yukon Gold), thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 tbsp butter or olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ cup frozen corn or green beans, cooked bacon bits, or sliced jalapeños

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet, brown ground beef over medium heat until no longer pink. Drain excess fat. Add diced onions and garlic; cook until fragrant.
  3. Mix sauce: In a separate bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Assemble: Layer half of the potatoes in the baking dish, followed by half of the beef mixture, cheese, and sauce. Repeat layers, finishing with cheese on top.
  5. Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and the top is golden.
  6. Cool: Let rest for 10 minutes before serving for best texture and flavor.

Notes

  • Slice potatoes evenly (⅛ inch thick) to ensure even cooking.
  • Add paprika, Worcestershire sauce, or Italian seasoning for flavor depth.
  • Use a mix of cheddar and mozzarella for extra creamy, stretchy cheese.
  • For a lighter version, use ground turkey and low-fat cheese.
  • Make-ahead: Assemble, cover, and refrigerate up to 24 hours before baking.
