Ingredients
- 1 lb ground beef (lean preferred)
- 5 medium potatoes (Russet or Yukon Gold), thinly sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 2 cups shredded cheddar cheese (divided)
- 1 tbsp butter or olive oil
- ½ tsp salt
- ¼ tsp black pepper
- Optional: ½ cup frozen corn or green beans, cooked bacon bits, or sliced jalapeños
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the beef: In a skillet, brown ground beef over medium heat until no longer pink. Drain excess fat. Add diced onions and garlic; cook until fragrant.
- Mix sauce: In a separate bowl, whisk together cream of mushroom soup and milk until smooth.
- Assemble: Layer half of the potatoes in the baking dish, followed by half of the beef mixture, cheese, and sauce. Repeat layers, finishing with cheese on top.
- Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and the top is golden.
- Cool: Let rest for 10 minutes before serving for best texture and flavor.
Notes
- Slice potatoes evenly (⅛ inch thick) to ensure even cooking.
- Add paprika, Worcestershire sauce, or Italian seasoning for flavor depth.
- Use a mix of cheddar and mozzarella for extra creamy, stretchy cheese.
- For a lighter version, use ground turkey and low-fat cheese.
- Make-ahead: Assemble, cover, and refrigerate up to 24 hours before baking.
