Ingredients

  • 3 1/2 Tbsp butter, divided
  • 1 medium red bell pepper, chopped (1 1/4 cups)
  • 1/2 cup chopped yellow onion
  • 1 (20 oz) package refrigerated shredded hash brown potatoes
  • 8 oz. chopped cooked ham
  • 6 large eggs, lightly beaten
  • Salt and freshly ground black pepper, to taste
  • 3/4 cup shredded cheddar cheese
  • 2 Tbsp chopped parsley


Instructions

  1. In a large skillet, heat 2 Tbsp butter over medium heat. Add the chopped bell pepper and onion, sauté for 3-4 minutes until soft.
  2. Add the remaining 1 1/2 Tbsp butter, then stir in the hash browns. Cook for 5-7 minutes until golden and crispy.
  3. Stir in chopped ham, cooking for another 3-4 minutes.
  4. Pour in the beaten eggs, season with salt and pepper, and scramble until fully cooked.
  5. Sprinkle cheddar cheese over the hash and let it melt. Garnish with chopped parsley.

Notes
