Ingredients
- 3 1/2 Tbsp butter, divided
- 1 medium red bell pepper, chopped (1 1/4 cups)
- 1/2 cup chopped yellow onion
- 1 (20 oz) package refrigerated shredded hash brown potatoes
- 8 oz. chopped cooked ham
- 6 large eggs, lightly beaten
- Salt and freshly ground black pepper, to taste
- 3/4 cup shredded cheddar cheese
- 2 Tbsp chopped parsley
Instructions
- In a large skillet, heat 2 Tbsp butter over medium heat. Add the chopped bell pepper and onion, sauté for 3-4 minutes until soft.
- Add the remaining 1 1/2 Tbsp butter, then stir in the hash browns. Cook for 5-7 minutes until golden and crispy.
- Stir in chopped ham, cooking for another 3-4 minutes.
- Pour in the beaten eggs, season with salt and pepper, and scramble until fully cooked.
- Sprinkle cheddar cheese over the hash and let it melt. Garnish with chopped parsley.
