Description

Crustless spinach tomato feta quiche makes an easy breakfast or light lunch with simple ingredients and fresh flavor. Perfect for cozy mornings or meal prep days.


Ingredients

  • 1 teaspoon extra-virgin olive oil or butter, for greasing pan
  • 4 large eggs
  • 2 cups milk
  • 3/4 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 small onion, finely diced
  • 16 oz frozen spinach, thawed and squeezed very dry
  • 8 oz feta cheese, crumbled
  • 1 pint cherry tomatoes, halved


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9-inch baking dish.
  2. Whisk eggs and milk together in a large bowl.
  3. In a separate bowl, combine flour, baking powder, salt, and pepper.
  4. Gradually whisk dry ingredients into the egg mixture until smooth.
  5. Stir in onion, spinach, and feta cheese until evenly combined.
  6. Pour mixture into prepared baking dish and arrange tomatoes on top.
  7. Bake for 45–50 minutes, until set in the center and lightly golden.
  8. Cool for 10 minutes before slicing and serving.
