Ingredients
- 2 medium zucchinis, grated
- 2 large eggs
- ½ cup all-purpose flour (or gluten-free flour)
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese (optional)
- 2 green onions, chopped
- Salt and black pepper, to taste
- 2 tbsp olive oil or vegetable oil (for frying)

Instructions
- Prepare the zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much liquid as possible to prevent soggy fritters.
- Mix the batter: In a bowl, combine the grated zucchini, eggs, flour, garlic, Parmesan, green onions, salt, and pepper. Stir until evenly mixed.
- Heat the oil: Warm oil in a large skillet over medium heat.
- Cook the fritters: Scoop about 2 tablespoons of mixture for each fritter. Flatten slightly and cook for 3–4 minutes per side until golden brown.
- Drain and serve: Place fritters on paper towels to remove excess oil. Serve warm with sour cream, tzatziki, or ranch dressing.
