Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs

  • 2 cloves garlic, minced

  • 2 green onions, chopped
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or vegetable oil (for frying)

Optional Add-ins:

  • Fresh herbs like parsley, dill, or basil

Instructions

  1. Prepare the zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much liquid as possible to prevent soggy fritters.
  2. Mix the batter: In a bowl, combine the grated zucchini, eggs, flour, garlic, Parmesan, green onions, salt, and pepper. Stir until evenly mixed.
  3. Heat the oil: Warm oil in a large skillet over medium heat.
  4. Cook the fritters: Scoop about 2 tablespoons of mixture for each fritter. Flatten slightly and cook for 3–4 minutes per side until golden brown.
  5. Drain and serve: Place fritters on paper towels to remove excess oil. Serve warm with sour cream, tzatziki, or ranch dressing.
