Description

Ingredients

For the Fries:

  • 1 bag waffle fries

For the Lemon Herb Sauce:

  • ¼ cup extra virgin olive oil
  • 1 whole lemon, zest and juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Red pepper flakes to taste

For the Cheese:

  • 1 cup mozzarella cheese, shredded
  • ½ cup feta cheese, crumbled


Instructions

  1. Bake the waffle fries according to package directions until deeply golden and as crispy as possible. For extra crispiness, bake on a wire rack set over the baking sheet so hot air circulates underneath each fry.
  2. While the fries bake, make the lemon herb sauce. Whisk together the olive oil, lemon zest, lemon juice, garlic powder, dried oregano, dried parsley, salt, black pepper, and red pepper flakes until fully combined. Taste and adjust seasoning.
  3. When the fries are fully crispy, remove from the oven and immediately scatter the shredded mozzarella evenly over the hot fries. Return to the oven for 2–3 minutes until the mozzarella is fully melted and just beginning to bubble.
  4. Remove from the oven and immediately scatter the crumbled feta over the melted mozzarella — the residual heat softens the feta slightly without melting it completely, which is exactly what you want.
  5. Drizzle the lemon herb sauce generously over the entire tray of loaded fries.
  6. Serve immediately directly from the tray while the fries are still hot and crispy.

Notes

  • Bake the fries as crispy as possible before adding any toppings — the cheese and sauce add moisture and the crispier the base fry the better the finished loaded fries will hold up.
  • Add the feta after removing from the oven rather than during baking — feta that bakes too long turns rubbery and loses its distinctive creamy, tangy character.
  • Make the lemon herb sauce before the fries are done so it is ready to drizzle immediately — the sauce hits best when the fries are straight from the oven.
