Description

A rich and savory pasta dish made with Italian sausage, tomatoes, red wine, and cream, finished with Parmesan for a comforting one-pot meal.


Ingredients

  • 14 oz Italian sausage (mild or spicy), casings removed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 14 oz canned chopped tomatoes
  • 10 oz short pasta (penne, rigatoni, or fusilli)
  • 1/2 cup dry red wine
  • 3 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons soy sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Heat a large skillet or deep pan over medium heat.
  2. Add Italian sausage and cook while breaking it apart until browned.
  3. Stir in chopped onion and diced bell pepper; cook 3–4 minutes until softened.
  4. Add minced garlic and cook 30 seconds until fragrant.
  5. Pour in the red wine and simmer 2–3 minutes, scraping up browned bits from the pan.
  6. Add chopped tomatoes, broth, soy sauce, oregano, chili flakes, and black pepper.
  7. Stir in the uncooked pasta and bring to a gentle simmer.
  8. Cook 10–12 minutes, stirring occasionally, until pasta is tender.
  9. Reduce heat and stir in heavy cream and Parmesan cheese.
  10. Cook another 2–3 minutes until the sauce becomes creamy.
  11. Taste and adjust salt if needed.
  12. Garnish with fresh basil or parsley before serving.

Notes

  • Use rigatoni or penne to hold the creamy sauce well.
  • A dry red wine like Merlot or Chianti works best.
  • Add a splash of pasta water or broth if the sauce becomes too thick.
