Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1 cup orange juice (freshly squeezed is best)
  • 1 tablespoon orange zest
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley (optional), for garnish


Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Sear chicken in olive oil over medium-high heat until golden and cooked through. Set aside.
  3. In the same skillet, combine orange juice, honey, soy sauce, mustard, and orange zest. Bring to a simmer.
  4. Add cranberries and cook until they burst and the glaze thickens.
  5. Return chicken to skillet, coat with glaze, and simmer 2–3 minutes. Garnish and serve.

Notes

  • Use a meat thermometer to avoid overcooking the chicken (165°F internal temp).
  • Adjust the glaze’s sweetness by adding more honey if your cranberries are especially tart.
  • Frozen cranberries work, but simmer a bit longer to reduce excess liquid.
