A sweet, tangy, and savory chicken dinner featuring fresh cranberries, orange juice, honey, and Dijon mustard—all made in one skillet for easy cleanup.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1 cup orange juice (freshly squeezed is best)
- 1 tablespoon orange zest
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh parsley (optional), for garnish
Instructions
- Season chicken with salt, pepper, and garlic powder.
- Sear chicken in olive oil over medium-high heat until golden and cooked through. Set aside.
- In the same skillet, combine orange juice, honey, soy sauce, mustard, and orange zest. Bring to a simmer.
- Add cranberries and cook until they burst and the glaze thickens.
- Return chicken to skillet, coat with glaze, and simmer 2–3 minutes. Garnish and serve.
Notes
- Use a meat thermometer to avoid overcooking the chicken (165°F internal temp).
- Adjust the glaze’s sweetness by adding more honey if your cranberries are especially tart.
- Frozen cranberries work, but simmer a bit longer to reduce excess liquid.
