Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- ½ cup fresh cranberries
- ¼ cup honey
- ¼ cup orange juice
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 ounces brie cheese, rind removed and cut into small pieces
- ¼ cup chopped fresh parsley
- ½ cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
- In a small saucepan, heat cranberries, honey, orange juice, cinnamon, and ginger. Cook 5–7 minutes until thickened.
- Cut a deep pocket into each chicken breast. Season lightly with salt and pepper.
- Stuff each pocket with brie, cranberry mixture, and parsley. Secure with toothpicks if needed.
- Mix melted butter with panko breadcrumbs. Press onto the top of each chicken breast.
- Heat olive oil in an oven-safe skillet. Sear chicken 2–3 minutes per side until golden.
- Transfer skillet to a 375°F (190°C) oven and bake 18–22 minutes, or until internal temperature reaches 165°F (74°C).
- Rest 5 minutes before slicing and serving.
Notes
- Remove brie rind for the creamiest filling.
- Toothpicks help keep stuffing inside during searing.
- For extra flavor, add rosemary or thyme to the cranberry mixture.
- Don’t skip resting—the cheese settles and the juices redistribute.
