Description

Tender chicken breasts stuffed with creamy brie and a sweet-tart cranberry filling, baked to golden perfection. This Cranberry Brie Stuffed Chicken is elegant, delicious, and perfect for holidays or special dinners.


Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ cup fresh cranberries
  • ¼ cup honey
  • ¼ cup orange juice
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • ¼ cup chopped fresh parsley
  • ½ cup panko breadcrumbs
  • 1 tablespoon butter, melted


Instructions

  1. In a small saucepan, heat cranberries, honey, orange juice, cinnamon, and ginger. Cook 5–7 minutes until thickened.
  2. Cut a deep pocket into each chicken breast. Season lightly with salt and pepper.
  3. Stuff each pocket with brie, cranberry mixture, and parsley. Secure with toothpicks if needed.
  4. Mix melted butter with panko breadcrumbs. Press onto the top of each chicken breast.
  5. Heat olive oil in an oven-safe skillet. Sear chicken 2–3 minutes per side until golden.
  6. Transfer skillet to a 375°F (190°C) oven and bake 18–22 minutes, or until internal temperature reaches 165°F (74°C).
  7. Rest 5 minutes before slicing and serving.

Notes

  • Remove brie rind for the creamiest filling.
  • Toothpicks help keep stuffing inside during searing.
  • For extra flavor, add rosemary or thyme to the cranberry mixture.
  • Don’t skip resting—the cheese settles and the juices redistribute.
  • Use gluten-free breadcrumbs if needed.
