A creamy, hearty chicken noodle soup loaded with bacon, ranch flavor, and melted cheese for the ultimate comfort meal.
Ingredients
- 3 cups cooked chicken (shredded or chopped)
- 1 (10.5 oz) can condensed chicken soup
- 6 cups low-sodium chicken stock
- 1 cup whole milk
- 1/2 cup celery, chopped
- 2 medium carrots, sliced
- 1 (1 oz) ranch dressing mix packet
- 12 slices bacon, cooked and crumbled
- 1 1/2 cups cheddar cheese, shredded
- 3/4 cup cream cheese, softened
- 8 oz thin spaghetti or angel hair (uncooked)
Instructions
- In a large pot, combine chicken stock and condensed soup; stir until smooth.
- Add celery and carrots; simmer 5–7 minutes until slightly tender.
- Stir in cooked chicken and ranch seasoning.
- Add broken pasta and cook until tender.
- Reduce heat and stir in cream cheese until melted.
- Add milk and cheddar cheese; stir until smooth and creamy.
- Mix in crumbled bacon and simmer briefly.
- Adjust seasoning and serve warm.
Notes
- Add extra broth when reheating if soup thickens.
- Use rotisserie chicken for quicker prep.
- Substitute pasta with egg noodles if preferred.
