Description

Crispy tortilla melts layered with seasoned smashed beef, melted cheese, and rich cowboy butter, finished with a creamy, tangy sauce.


Ingredients

Smashed Beef

  • lbs ground beef (80/20 blend)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Cowboy Butter

  • 6 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon flaky salt

Assembly

  • 1012 small flour tortillas
  • 2 cups shredded cheddar or American cheese
  • Butter or oil, for cooking

Sauce

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon hot sauce
  • 1 tablespoon pickle juice
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Pinch of cayenne


Instructions

  1. Mix all cowboy butter ingredients in a bowl and set aside.
  2. Combine ground beef with seasonings until just mixed.
  3. Heat a skillet over medium-high heat and lightly grease.
  4. Spread a thin layer of beef onto one side of a tortilla and place beef-side down in the skillet.
  5. Cook 2–3 minutes until beef is crispy, then flip.
  6. Add cheese and drizzle lightly with cowboy butter.
  7. Cook 1–2 minutes until cheese melts and tortilla is golden.
  8. Repeat with remaining tortillas.
  9. Stir sauce ingredients together and serve with warm melts.

Notes

  • Press beef firmly onto tortillas so it sticks while cooking
  • Use medium heat when melting cheese to avoid burning
  • Serve sauce on the side to keep tortillas crispy
