A light, protein-packed Alfredo made with blended cottage cheese, Parmesan, garlic, and tender linguine for a creamy pasta dinner that comes together in minutes.
Ingredients
- 2 cups cottage cheese (4% fat)
- ½ cup freshly grated Parmesan cheese
- 1 garlic clove
- ½ teaspoon salt, plus more for cooking pasta
- ½ teaspoon black pepper
- 1 pound linguine
- 4 tablespoons unsalted butter, room temperature
- ¼ cup chopped fresh parsley (optional)
- Additional grated Parmesan for serving (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions. Reserve 1 cup of pasta water before draining.
- Add cottage cheese, Parmesan, garlic, salt, and pepper to a blender. Blend until completely smooth.
- Melt butter in a large skillet over low heat. Pour in the blended sauce and warm gently without boiling.
- Add the cooked pasta to the skillet and toss to coat, adding pasta water as needed to loosen the sauce.
- Stir in parsley and top with extra Parmesan before serving.

- Blend the sauce thoroughly for the smoothest Alfredo texture.
- Add a splash of lemon juice for brightness.
- Mix in spinach, grilled chicken, or steamed broccoli for extra nutrition.
