Description

A light, protein-packed Alfredo made with blended cottage cheese, Parmesan, garlic, and tender linguine for a creamy pasta dinner that comes together in minutes.


Ingredients

  • 2 cups cottage cheese (4% fat)
  • ½ cup freshly grated Parmesan cheese
  • 1 garlic clove
  • ½ teaspoon salt, plus more for cooking pasta
  • ½ teaspoon black pepper
  • 1 pound linguine
  • 4 tablespoons unsalted butter, room temperature
  • ¼ cup chopped fresh parsley (optional)
  • Additional grated Parmesan for serving (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Add cottage cheese, Parmesan, garlic, salt, and pepper to a blender. Blend until completely smooth.
  3. Melt butter in a large skillet over low heat. Pour in the blended sauce and warm gently without boiling.
  4. Add the cooked pasta to the skillet and toss to coat, adding pasta water as needed to loosen the sauce.
  5. Stir in parsley and top with extra Parmesan before serving.
