Description

A classic slow cooker meal featuring tender corned beef, hearty vegetables, and rich, savory flavors.


Ingredients

  • 3 to 4 pounds corned beef brisket (with spice packet)
  • 1 onion, sliced
  • 3 cloves garlic, sliced
  • 2 bay leaves
  • 2 1/2 to 3 cups water
  • 2 pounds potatoes, peeled and quartered
  • 2 large carrots, chopped
  • 1 small head green cabbage, cut into wedges


Instructions

  1. Place onion and garlic in the bottom of the slow cooker.
  2. Add corned beef on top and sprinkle with spice packet.
  3. Pour in water and add bay leaves.
  4. Cover and cook on low for 8–10 hours or high for 4–5 hours.
  5. Add potatoes and carrots 2–3 hours before done.
  6. Add cabbage during the last hour of cooking.
  7. Slice beef against the grain and serve with vegetables and broth.

Notes

  • Rinse corned beef to reduce salt if desired.
  • Add cabbage later to keep it from getting too soft.
  • Use broth instead of water for deeper flavor.
