Ingredients
- 3 to 4 pounds corned beef brisket (with spice packet)
- 1 onion, sliced
- 3 cloves garlic, sliced
- 2 bay leaves
- 2 1/2 to 3 cups water
- 2 pounds potatoes, peeled and quartered
- 2 large carrots, chopped
- 1 small head green cabbage, cut into wedges
Instructions
- Place onion and garlic in the bottom of the slow cooker.
- Add corned beef on top and sprinkle with spice packet.
- Pour in water and add bay leaves.
- Cover and cook on low for 8–10 hours or high for 4–5 hours.
- Add potatoes and carrots 2–3 hours before done.
- Add cabbage during the last hour of cooking.
- Slice beef against the grain and serve with vegetables and broth.
Notes
- Rinse corned beef to reduce salt if desired.
- Add cabbage later to keep it from getting too soft.
- Use broth instead of water for deeper flavor.
