Description
A quick and flavorful dish with tender cod fillets simmered in a smooth roasted red pepper and garlic sauce, ready in 30 minutes.
Ingredients
For the Sauce:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups roasted red peppers
- 1 cup vegetable broth (or chicken broth)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
For the Cod:

For Garnish:

2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat. Cook diced onion until soft, then add garlic and cook until fragrant.
- Add roasted red peppers, broth, smoked paprika, oregano, salt, and pepper. Simmer for 5–7 minutes.
- Blend the mixture until smooth, then return to the skillet.
- Season cod fillets and place them into the sauce. Spoon sauce over the fish.
- Cover and cook for 8–10 minutes until the fish is opaque and flakes easily.
- Garnish with fresh parsley and serve warm.
Notes
- Use jarred roasted red peppers for convenience.
- Avoid overcooking the fish to keep it tender.
- Add a pinch of chili flakes for extra heat if desired.
