Description

A quick and flavorful dish with tender cod fillets simmered in a smooth roasted red pepper and garlic sauce, ready in 30 minutes.


Ingredients

For the Sauce:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups roasted red peppers
  • 1 cup vegetable broth (or chicken broth)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Cod:

  • 4 fillets cod

For Garnish:

  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat. Cook diced onion until soft, then add garlic and cook until fragrant.
  2. Add roasted red peppers, broth, smoked paprika, oregano, salt, and pepper. Simmer for 5–7 minutes.
  3. Blend the mixture until smooth, then return to the skillet.
  4. Season cod fillets and place them into the sauce. Spoon sauce over the fish.
  5. Cover and cook for 8–10 minutes until the fish is opaque and flakes easily.
  6. Garnish with fresh parsley and serve warm.

Notes

  • Use jarred roasted red peppers for convenience.
  • Avoid overcooking the fish to keep it tender.
  • Add a pinch of chili flakes for extra heat if desired.
