Description

This Coconut Lime Poke Cake is a tropical delight with a moist cake soaked in a coconut-lime filling and topped with whipped cream and toasted coconut. Perfect for any celebration or a sweet indulgence!


Ingredients

  • 432 g white cake mix
  • 118 ml neutral oil
  • 118 ml fresh lime juice (approximately 3 limes)
  • Zest of 1 lime
  • 177 ml water
  • 4 egg whites
  • 425 g cream of coconut
  • 355 ml heavy cream
  • 60 g powdered sugar
  • 60 g toasted coconut flakes
  • Zest of 1 lime


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. Mix the cake mix, oil, lime juice, lime zest, water, and egg whites in a large bowl. Beat for 2 minutes.
  3. Pour the batter into the pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool.
  4. In a bowl, combine cream of coconut, heavy cream, and powdered sugar. Whisk until smooth.
  5. Poke holes in the cooled cake and pour the coconut-lime mixture over it. Let it soak.
  6. Top with whipped cream, toasted coconut, and lime zest. Chill for 2+ hours.
  7. Serve and enjoy!
