Discover the best Classic Lasagna Bolognese Recipe — layers of rich meat sauce, creamy béchamel, and pasta baked to perfection. Authentic Italian comfort food that’s perfect for family dinners or special occasions.

Ingredients

For the Bolognese Sauce

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • ½ lb ground beef
  • ½ lb ground pork
  • ½ cup dry red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup milk
  • Salt and black pepper to taste
  • Fresh basil or oregano (optional)

For the Béchamel Sauce

  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups warm milk
  • A pinch of nutmeg
  • Salt and pepper to taste

For Assembly

  • 12 lasagna noodles (fresh or dried)
  • 1 ½ cups grated Parmesan cheese
  • 1 ½ cups shredded mozzarella cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Bolognese Sauce:
Heat olive oil in a pan over medium heat. Sauté onions, carrots, and celery until softened. Add garlic, then the beef and pork, and cook until browned. Pour in wine, let it reduce, then add crushed tomatoes, tomato paste, and milk. Simmer for 45–60 minutes until thick and rich.
  2. Make the Béchamel Sauce:
In a saucepan, melt butter. Add flour and whisk until smooth. Gradually add warm milk, whisking constantly until the sauce thickens. Season with salt, pepper, and nutmeg.
  3. Cook the Pasta:
Boil lasagna noodles until al dente. Drain and lay flat on parchment paper.
  4. Assemble the Lasagna:
Preheat oven to 375°F (190°C). Layer Bolognese sauce, pasta, béchamel, and cheese in a baking dish. Repeat until all ingredients are used, ending with béchamel and cheese.
  5. Bake:
Cover with foil and bake for 25 minutes. Remove foil and bake another 15–20 minutes until golden and bubbly. Rest 10 minutes before slicing.

Notes

  • Let your sauce simmer low and slow — it deepens the flavor.
  • Use fresh pasta for a softer texture or dried for structure.
  • Rest your lasagna before serving so the layers set perfectly.
  • Add extra Parmesan for a richer, more savory top crust.
  • Make it ahead of time and refrigerate overnight for even better flavor.
