Ingredients
For the Cookies
- 2 large egg whites, at room temperature
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 pinch fine salt
- 1 cup finely chopped pecans
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
- Beat egg whites in a clean, dry bowl until soft peaks begin to form.
- Slowly add sugar, continuing to beat until the mixture becomes thick, glossy, and forms stiff peaks.
- Mix in vanilla and salt, gently folding to keep the mixture airy.
- Fold in pecans and chocolate chips until evenly distributed.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Place in the oven, then immediately turn the oven OFF.
- Leave the cookies in the cooling oven overnight or at least 6 hours without opening the door.
- Remove the cookies once fully dry and crisp, then enjoy!
Notes
- Ensure egg whites are room temperature—they whip better.
- Use a completely clean, grease-free bowl for beating.
- Don’t open the oven door during cooling; it disrupts the drying process.
- Swap pecans with walnuts, almonds, pistachios, or leave nuts out entirely.
- Store cookies in an airtight container to prevent humidity from softening them.
