Description

Classic Forgotten Cookies are light, crisp meringue-style treats filled with pecans and chocolate chips. An easy overnight cookie that “bakes” while the oven cools—simple, nostalgic, and delicious!


Ingredients

For the Cookies

  • 2 large egg whites, at room temperature
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch fine salt
  • 1 cup finely chopped pecans
  • 1 cup semisweet chocolate chips


Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. Beat egg whites in a clean, dry bowl until soft peaks begin to form.
  3. Slowly add sugar, continuing to beat until the mixture becomes thick, glossy, and forms stiff peaks.
  4. Mix in vanilla and salt, gently folding to keep the mixture airy.
  5. Fold in pecans and chocolate chips until evenly distributed.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Place in the oven, then immediately turn the oven OFF.
  8. Leave the cookies in the cooling oven overnight or at least 6 hours without opening the door.
  9. Remove the cookies once fully dry and crisp, then enjoy!

Notes

  • Ensure egg whites are room temperature—they whip better.
  • Use a completely clean, grease-free bowl for beating.
  • Don’t open the oven door during cooling; it disrupts the drying process.
  • Swap pecans with walnuts, almonds, pistachios, or leave nuts out entirely.
  • Store cookies in an airtight container to prevent humidity from softening them.
