Ingredients
- 1 (15.25 oz) box chocolate cake mix
- 8 oz cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ cup powdered sugar (for rolling)
Instructions
- Preheat the oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and cream cheese: In a large mixing bowl, beat softened butter and cream cheese until smooth and fluffy.
- Add wet ingredients: Mix in the egg and vanilla extract until fully combined.
- Incorporate cake mix: Gradually add the chocolate cake mix, mixing until a thick dough forms.
- Chill the dough: Refrigerate for 30 minutes to make rolling easier.
- Form cookies: Scoop 1-inch dough balls and roll them in powdered sugar to coat completely.
- Bake: Place on prepared baking sheet and bake for 10–12 minutes, until edges are set but centers remain slightly soft.
- Cool: Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use room-temperature butter and cream cheese for the smoothest dough.
- Don’t skip chilling the dough—it prevents excessive spreading.
- For extra gooeyness, slightly underbake the cookies.
- Add chocolate chips or chunks for an extra fudgy boost.
- Roll dough balls twice in powdered sugar for a thicker coating and prettier crackle effect.
