Ingredients

Cookie Cups

  • ¾ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Cookie Dough Frosting

  • ¾ cup unsalted butter, softened
  • 1 cup + 1 tablespoon packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1 ¼ cups all-purpose flour (heat-treated)
  • ¾ teaspoon salt
  • 6 tablespoons milk
  • 1 ¼ cups mini chocolate chips
  • Mini Chips Ahoy cookies, optional for garnish


Instructions

Make the Cookie Cups

  1. Preheat oven to 350°F (177°C). Grease a 24-cup mini muffin tin.
  2. In a bowl, beat butter, brown sugar, and granulated sugar until creamy.
  3. Mix in the egg and vanilla extract.
  4. Whisk together flour, cornstarch, baking soda, and salt in a separate bowl.
  5. Add dry ingredients to the wet mixture and mix until combined. Fold in chocolate chips.
  6. Drop about 1 tablespoon of dough into each muffin cup and press a shallow well in the center.
  7. Bake 10–12 minutes, until edges are lightly golden.
  8. Immediately re-press the centers to deepen the wells.
  9. Cool completely before filling.

Make the Cookie Dough Frosting

  1. Heat-treat flour in the microwave until it reaches 165°F; let cool.
  2. Beat butter and brown sugar until fluffy.
  3. Add vanilla and salt.
  4. Mix in cooled flour and milk until smooth.
  5. Fold in mini chocolate chips.
  6. Pipe or spoon frosting into cooled cookie cups.
  7. Top with mini cookies if desired.

Notes

  • Heat-treat the flour to make the frosting safe to eat.
  • Add a pinch of flaky sea salt on top to balance sweetness.
  • Chill the cookie cups before piping frosting for clean swirls.
  • Use a small measuring spoon to press the wells evenly.
