A comforting one-skillet meal featuring juicy pan-seared chicken and creamy garlic Parmesan rice infused with bright lemon and fresh herbs.
Ingredients
For the Chicken & Rice
- 2 large chicken breasts
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 3 tablespoons butter
- 3 tablespoons lemon juice
- 1 ½ cups chicken broth
- ½ cup freshly grated Parmesan cheese
- ½ cup heavy cream
- 1 cup long-grain rice
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes
Instructions
- Season the chicken with salt, pepper, and crushed red pepper flakes.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and set aside.
- Add remaining butter to the skillet. Stir in garlic and cook until fragrant.
- Pour in lemon juice and chicken broth, scraping up browned bits.
- Stir in the rice, then add the heavy cream. Reduce heat, cover, and simmer for 15–18 minutes until the rice is tender.
- Stir in Parmesan until creamy.
- Slice cooked chicken and return it to the skillet.
- Top with fresh parsley and serve warm.
Notes
- Use freshly grated Parmesan for the best melt and flavor.
- If the rice becomes too thick, add a splash of broth or cream.
- Add spinach or cherry tomatoes for extra color and freshness.
