Description

A comforting one-skillet meal featuring juicy pan-seared chicken and creamy garlic Parmesan rice infused with bright lemon and fresh herbs.


Ingredients

For the Chicken & Rice

  • 2 large chicken breasts
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 tablespoons lemon juice
  • 1 ½ cups chicken broth
  • ½ cup freshly grated Parmesan cheese
  • ½ cup heavy cream
  • 1 cup long-grain rice
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes


Instructions

  1. Season the chicken with salt, pepper, and crushed red pepper flakes.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and set aside.
  3. Add remaining butter to the skillet. Stir in garlic and cook until fragrant.
  4. Pour in lemon juice and chicken broth, scraping up browned bits.
  5. Stir in the rice, then add the heavy cream. Reduce heat, cover, and simmer for 15–18 minutes until the rice is tender.
  6. Stir in Parmesan until creamy.
  7. Slice cooked chicken and return it to the skillet.
  8. Top with fresh parsley and serve warm.

Notes

  • Use freshly grated Parmesan for the best melt and flavor.
  • If the rice becomes too thick, add a splash of broth or cream.
  • Add spinach or cherry tomatoes for extra color and freshness.
