Description

Ingredients

  • 46 chicken thighs, bone-in and skin-on
  • 2 tablespoons Cajun seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour (or gluten-free blend)
  • 2 cups chicken broth
  • 1/2 cup heavy cream (or plant-based alternative)


Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Sear in hot olive oil 5–7 minutes skin-side down; flip and cook 3–4 minutes. Remove.
  3. Sauté onion until softened; add garlic and cook briefly.
  4. Melt butter, whisk in flour, and cook 1–2 minutes to form roux.
  5. Gradually whisk in chicken broth until smooth and thickened.
  6. Stir in cream and simmer gently.
  7. Return chicken to skillet and simmer 20–25 minutes until internal temperature reaches 165°F.
  8. Rest briefly and serve with gravy spooned over top.

  • Maintain medium heat while making the roux to avoid burning.
