Creamy, cheesy buffalo chicken bites loaded with spicy flavor and baked until golden for the perfect appetizer or snack.
Ingredients
For the Filling
- 6 oz cream cheese, softened
- 6 tbsp unsalted butter, melted
- 80 ml hot sauce
- 1½ tsp Cajun seasoning
- 340 g chopped rotisserie chicken
- 150 g shredded cheddar cheese
- 30 g blue cheese crumbles
- 3 tbsp sliced chives
- 1 large carrot, grated (optional)
- 1 celery stalk, thinly sliced
- 2 tbsp apple cider vinegar
- Kosher salt, to taste

- Ranch dressing
- Extra blue cheese crumbles
- Celery sticks
Instructions
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- In a large bowl, mix cream cheese and melted butter until smooth.
- Stir in hot sauce and Cajun seasoning.
- Add chopped chicken, cheddar cheese, blue cheese, chives, carrot, celery, and apple cider vinegar.
- Mix until fully combined.
- Scoop mixture into small bite-sized portions onto the baking sheet.
- Bake for 18–22 minutes until heated through and lightly golden.
- Optional: Broil for 1–2 minutes for extra color.
- Serve warm with ranch or blue cheese dressing.
Notes
- Use rotisserie chicken for quick prep and extra flavor.
- Adjust hot sauce for milder or spicier bites.
- Chill mixture for 15 minutes before shaping if needed.
