Description

Juicy chicken breasts tossed in balsamic vinegar, garlic, and oregano, served with fresh spinach, cherry tomatoes, and an optional sprinkle of Parmesan. Perfect for quick, healthy weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Pat chicken dry and season with salt, pepper, and oregano.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden brown.
  3. Add minced garlic and cook 1 minute until fragrant.
  4. Pour in balsamic vinegar and simmer 2–3 minutes until lightly thickened.
  5. Stir in spinach and cherry tomatoes, cooking 2–3 minutes until spinach wilts and tomatoes soften.
  6. Sprinkle with Parmesan if desired and serve immediately.
