Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2–3 Roma tomatoes, sliced (or 1 cup cherry tomatoes, halved)
- 8 oz fresh mozzarella cheese, sliced
- Fresh basil leaves
- 2 tablespoons balsamic glaze (store-bought or homemade)
Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil or nonstick spray.

Place chicken breasts in the baking dish. Drizzle with olive oil, then season both sides with salt, pepper, garlic powder, and Italian seasoning.

Bake chicken for 20–25 minutes, depending on thickness, until nearly cooked through.

Remove from oven and top each chicken breast with sliced tomatoes and mozzarella. Return to the oven for an additional 5–7 minutes, or until cheese is melted and bubbly.
