Description
Fluffy, golden, and irresistibly light—these 3-ingredient lemonade scones are the easiest and quickest treat you’ll ever bake. Perfect for morning tea or a cozy afternoon snack. Ready in under 30 minutes!
Ingredients
- 3 cups self-raising flour
- 1 cup thickened cream (heavy cream)
- 1 cup lemonade (not sugar-free)
Optional: extra flour for dusting, jam, whipped cream, or butter for serving
Instructions
- Preheat Oven – Preheat to 220°C (425°F) and line a baking tray with parchment paper.
- Mix the Dough – In a large bowl, combine self-raising flour, cream, and lemonade. Use a spoon or spatula to fold the ingredients until just combined. Do not overmix.
- Shape the Dough – Turn the dough out onto a lightly floured surface. Pat into a 2–3 cm thick rectangle.
- Cut the Scones – Use a round cutter or glass to cut out scones. Press straight down—avoid twisting.
- Bake – Arrange scones close together on the tray. Bake for 12–15 minutes or until lightly golden.
- Serve – Let them cool slightly on a rack. Serve warm with jam and whipped cream or butter and honey.
Notes
- Cold Lemonade Works Best: Keep your lemonade fizzy and chilled—it helps create that signature fluffy texture.
- Don’t Overmix: Overworking the dough makes scones dense. Gentle mixing is key.
- Touching Sides Help Rise: Place scones close together on the tray for taller, softer results.
- For Savory Scones: Swap lemonade for soda water and add grated cheese or herbs.
- Best Served Fresh: They’re at their best on the day they’re baked!
