Ingredients

  • 3 cups self-raising flour
  • 1 cup thickened cream (heavy cream)
  • 1 cup lemonade (not sugar-free)

Optional: extra flour for dusting, jam, whipped cream, or butter for serving


Instructions

  1. Preheat Oven – Preheat to 220°C (425°F) and line a baking tray with parchment paper.
  2. Mix the Dough – In a large bowl, combine self-raising flour, cream, and lemonade. Use a spoon or spatula to fold the ingredients until just combined. Do not overmix.
  3. Shape the Dough – Turn the dough out onto a lightly floured surface. Pat into a 2–3 cm thick rectangle.
  4. Cut the Scones – Use a round cutter or glass to cut out scones. Press straight down—avoid twisting.
  5. Bake – Arrange scones close together on the tray. Bake for 12–15 minutes or until lightly golden.
  6. Serve – Let them cool slightly on a rack. Serve warm with jam and whipped cream or butter and honey.
