Ingredients
- 1 medium to large zucchini
- 1 cup panko breadcrumbs
- ¾ cup 3-cheese blend (Romano, Parmesan, mozzarella)
- ¾ teaspoon garlic powder
- ½ teaspoon cracked black pepper
- ¼–½ teaspoon sea salt
- 1 large egg

Instructions
- Preheat air fryer to 400°F (200°C).
- Slice zucchini into ¼-inch rounds.
- Pat zucchini dry with paper towels.
- Whisk egg in a shallow bowl.
- In another bowl, combine breadcrumbs, cheese blend, garlic powder, pepper, and salt.
- Dip zucchini slices into egg, then coat in breadcrumb mixture.
- Arrange zucchini in a single layer in the air fryer basket.
- Air fry for 8–10 minutes, flipping halfway through cooking.
- Serve warm with your favorite dipping sauce.
