Description

Ingredients

  • 1 medium to large zucchini
  • 1 cup panko breadcrumbs
  • ¾ cup 3-cheese blend (Romano, Parmesan, mozzarella)
  • ¾ teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ¼½ teaspoon sea salt
  • 1 large egg

Optional for Serving

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Slice zucchini into ¼-inch rounds.
  3. Pat zucchini dry with paper towels.
  4. Whisk egg in a shallow bowl.
  5. In another bowl, combine breadcrumbs, cheese blend, garlic powder, pepper, and salt.
  6. Dip zucchini slices into egg, then coat in breadcrumb mixture.
  7. Arrange zucchini in a single layer in the air fryer basket.
  8. Air fry for 8–10 minutes, flipping halfway through cooking.
