Description

A savory 20-minute skillet dinner with sausage, zucchini, and veggies. Simple, quick, and full of flavor!


Ingredients

  • 2½ tablespoons olive oil or avocado oil
  • 4 fully cooked sausages, sliced into circles ¼ inch thick
  • 2 medium zucchinis, cubed
  • 1 onion, cut into ¾ inch pieces
  • 1 bell pepper, cut into ¾ inch pieces
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic, minced


Instructions

  • Heat the oil in a large skillet over medium-high heat. Add the sausage slices and cook until browned, about 4-5 minutes. Set aside.
  • In the same skillet, add more oil if needed, and sauté the onion, bell pepper, and zucchini for 5-6 minutes until softened.
  • Add the salt, oregano, basil, garlic powder, onion powder, black pepper, and garlic. Stir well.
  • Return the sausage to the skillet, mixing to combine and heat through for 3-4 minutes.
  • Serve immediately and enjoy!

  • Feel free to add extra veggies like mushrooms or spinach for more flavor.
