A savory 20-minute skillet dinner with sausage, zucchini, and veggies. Simple, quick, and full of flavor!
Ingredients
- 2½ tablespoons olive oil or avocado oil
- 4 fully cooked sausages, sliced into circles ¼ inch thick
- 2 medium zucchinis, cubed
- 1 onion, cut into ¾ inch pieces
- 1 bell pepper, cut into ¾ inch pieces
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- 1 teaspoon garlic, minced
Instructions
- Heat the oil in a large skillet over medium-high heat. Add the sausage slices and cook until browned, about 4-5 minutes. Set aside.
- In the same skillet, add more oil if needed, and sauté the onion, bell pepper, and zucchini for 5-6 minutes until softened.
- Add the salt, oregano, basil, garlic powder, onion powder, black pepper, and garlic. Stir well.
- Return the sausage to the skillet, mixing to combine and heat through for 3-4 minutes.
- Serve immediately and enjoy!

- Feel free to add extra veggies like mushrooms or spinach for more flavor.
- Swap out the sausage for a leaner variety like chicken or turkey sausage for a healthier option.
