Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 23 medium zucchinis, spiralized into noodles
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Prepare Zoodles: Spiralize the zucchinis into noodles and set them on a paper towel to absorb excess moisture.
  2. Cook Shrimp: In a large skillet, heat olive oil and 1 tbsp of butter over medium-high heat. Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink. Remove shrimp and set aside.
  3. Make Garlic Sauce: Add remaining butter to the same pan. Stir in minced garlic and sauté for 30 seconds until fragrant. Add lemon juice and red pepper flakes.
  4. Add Zoodles: Toss zoodles in the sauce for 2–3 minutes until slightly tender but still crisp.
  5. Combine: Return shrimp to the pan and toss everything together until heated through.
  6. Serve: Garnish with chopped parsley and serve immediately with an extra squeeze of lemon if desired.
